Looking to add some variety to the meals you’ve been preparing in your kitchen? Want to introduce some new flavors to your family? Or, are you searching for the perfect crowd pleasing meal to serve to your guests at your upcoming get together? Either way this easy chicken alfredo lasagna is for you! This meal can be assembled ahead of time and baked just before you’re ready to serve. Just assemble, pop in the oven, and wow your family and friends with this savory dish!

Ingredients For Your Easy Chicken Alfredo Lasagna

The Pasta

Of course you will need pasta for your chicken alfredo lasagna. Personally, I have always made this recipe with my homemade pasta cut into long strips. This is my go to lasagna noodle. You can follow my Sourdough Pasta Recipe if you want to make your own homemade pasta as well. However, that is completely optional! Regular lasagna noodles from the store work just as well! Regular white pasta or whole wheat pasta would both be great options for this lasagna. Gluten free pasta would also work if that is your preference! The one type of pasta that I would recommend against is a no boil pasta. The noodles are boiled first for this recipe, so opt for a regular boil ahead noodle!

The Chicken

The chicken that I prefer to use in this recipe is chicken that has been roasted and pulled from the bones. This type is so flavorful, moist, and delicious! You can learn how to make an easy roasted chicken by following these steps! Another great option for this recipe is to purchase your favorite rotisserie chicken from the store and pull the chicken from the bones in the same way that you would a homemade roasted chicken. Finally, if you only have chicken breasts or thighs on hand and you want to use them up, you can use that too! Simply bake the chicken, lightly seasoned with salt and pepper, in a covered dish for about an hour. Then shred the chicken with a fork.

The Cheeses

The cheeses that I love to use for layering this lasagna are ricotta and mozzarella. The ricotta adds a layer of creaminess to the dish, and of course mozzarella is an iconic Italian dish taste that we all love! Pre shredded mozzarella or mozzarella shredded at home both work great!

The Spinach

The spinach in this recipe is actually optional. If you’re not a fan of cooked spinach or if you are dealing with some picky eaters, no worries! The spinach can be omitted with no problem! However, if you’re like me, you’ll find the additional texture, flavor, and color to be delightful. This recipe works fabulously with frozen or fresh spinach!

The Alfredo Sauce

The alfredo sauce is the star of the show in this easy chicken alfredo lasagna! Made of a delicious creamy blend of butter, cream, cream cheese, and parmesan, you’ll be making this sauce for more than just this lasagna recipe – although I think you’ll agree that the lasagna is the best! The ingredients are heated together until they for the most delectable cheese sauce that is then lightly seasoned with salt, pepper, and parsley.

Preparing The Different Parts

Once you have all your ingredients sourced, you can begin preparing all the different parts for your lasagna. The first step you need to take is boiling your lasagna noodles.

Fill a large stock pot with water and add a few tablespoons of olive oil. Once the water is boiling, add the lasagna noodles and boil for about 5 minutes until they are tender.

Dump all the noodles and water into a colander in the sink. Rinse with cool water and separate so that the noodles don’t stick together.

Next, you can move onto picking the chicken from the bones of your roasted or rotisserie chicken. Alternatively, shred the baked chicken breasts.

Then it’s time to make the alfredo sauce. Begin by melting your butter in a small saucepan over low to medium heat. Once the butter is melted add the heavy cream and stir thoroughly.

Next, add in the cream cheese, and stir this very well also.

Add in the grated parmesan and again, stir thoroughly to combine.

Add in the salt, pepper, and parsley, and give your delicious cream sauce on final stir.

Finally, be sure to have your shredded mozzarella, ricotta, and spinach on hand for easy assembly.

Assembling And Baking Your Easy Chicken Alfredo Lasagna

Now that all the different parts of your lasagna are prepared, it’s time to begin assembling.

Start by adding a couple spoons of the alfredo sauce to the bottom of your casserole dish. Add 3-4 lasagna noodles (as many as are needed to cover the surface.

Next add your first layer of mozzarella cheese, ricotta cheese, and spinach. Simply sprinkle the mozzarella cheese evenly. Take small spoons of the ricotta cheese and dab it through the layer – it doesn’t have to be spread over the noodles.

Then evenly spread a layer of spinach over the noodles and cheese leaving some noodles showing so the spinach isn’t too thick.

Next, add another layer of noodles – about 3-4 so that the previous layer is covered.

Then it’s time for the first chicken layer. Evenly sprinkle a layer of the shredded chicken over the noodles. Then drizzle the alfredo sauce over the chicken using about 1/4 cup of the sauce per layer.

Continue layering the lasagna. Once you get to the last layer, add noodles one more time, and then generously sprinkle with mozzarella cheese on the top.

Bake your lasagna in a 350 degree oven for about a half hour or until the cheese is deliciously golden on the top!

Bonus Note

This lasagna is delicious the first night, but it is also fabulous reheated the next day or a few days after that! I’ve even frozen this lasagna and reheated and it’s just as good as the first day.

Also, if you need to prepare this dish ahead of time, you can assemble this lasagna, store it in the fridge for up to a few days, and bake just like you would right after assembling!

Easy Chicken Alfredo Lasagna

This delicious chicken alfredo lasagna is sure to be a crowd pleaser at your next family get together! Best of all it can be assembled ahead of time before baking so you can host stress free and serve this piping hot to your guests!

Total Time 1 hour

Ingredients

  • 16 Lasagna Noodles
  • 4 Quarts Water
  • 2 T Olive Oil
  • 3 Cups Rotisserie Chicken Picked From The Bone
  • 2 Cups Frozen Spinach
  • 1 6 Oz. Bag Mozzarella Cheese
  • 8 Oz. Ricotta Cheese
  • 4 T Butter
  • 1 Cup Heavy Cream
  • 2 Oz. Cream Cheese
  • 3/4 Cup Grated Parmesan
  • 1/4 Tsp. Salt
  • 1/2 T Parsley

Instructions

  1. Fill a large stock pot with 4 quarts of water, and add the 2 tablespoons of water. Bring to a boil.
  2. Add the lasagna noodles and boil for about 5 minutes until tender.
  3. Drain the noodles in a colander and rinse with cool water. Separate the noodles so they don't stick together.
  4. In a small saucepan melt the 4 tablespoons of butter.
  5. Add in the heavy cream and stir until very well combined.
  6. Add in the cream cheese and stir very well.
  7. Add in the parmesan cheese, salt, and parsley and whisk these ingredients together very well. Keep over the heat until everything is melted together in a creamy sauce.
  8. Begin layering the lasagna by adding a few spoons of the alfredo sauce to the bottom of a 9X12 casserole dish.
  9. Layer 3-4 lasagna noodles as the first layer making sure that the bottom of the pan is covered.
  10. As the next layer, sprinkle mozzarella cheese and add small spoons of ricotta cheese along with spinach.
  11. Add another layer of noodles.
  12. As the next layer, add the shredded chicken and alfredo sauce.
  13. Continue layering the noodles, mozzarella-ricotta-spinach, noodles, chicken-alfredo sauce, until the final layer.
  14. As the top layer add only lasagna noodles and mozzarella cheese.
  15. Preheat the oven at 350 degrees.
  16. Bake the lasagna for about 30 minutes until the cheese is melted and golden.
  17. Cut and serve your delicious lasagna!
