This delicious honey wheat bread is the perfect bread for any day where you only have a few hours from start to finish for baking. This bread is so soft and fluffy, and the slight sweetness from the honey is delicious. If you’re working with a stand mixer, the dough only takes about five minutes to come together. Because of the high amount of yeast in the recipe, the rise time is short. This means you’ll be getting fresh baked bread on the table for dinner even if you didn’t get around to starting your bread dough until three or four o’clock! In addition, the process of mixing, shaping, and baking the bread is extremely simple. The bread doesn’t require a Dutch oven, so the equipment is minimal.

Ingredients For The Honey Wheat Bread

  1. Water
  2. Butter
  3. Honey
  4. Salt
  5. Yeast
  6. All Purpose Flour
  7. Whole Wheat Flour

For the water, it’s best to go with water that has been filtered. Even though the bread will be baked, some impurities will not be destroyed by heat alone. So for the best quality bread, filter your water.

I use an organic butter. Organic or grass fed butter will give you the healthiest final product! I also use a salted butter but it you only have unsalted butter on hand, no worries! You can either increase the salt in the recipe up to 1/4 teaspoon, or opt for a slightly less salty bread.

For the honey, I love using the raw wildflower honey I buy from Azure Standard. They offer a quality honey at an affordable price.

I love using sea salt or pink Himalayan salt for all my recipes including my bread recipes!

Opt for an active dry yeast for this recipe for best results. Rather than buying my yeast in pre portioned packages. I like buying my yeast bulk in a bag. This way, I have no waste if a recipe takes less than a full pouch. I use Bob’s Red Mill Active Dry Yeast for all of my baking!

For the flour, I use a combination or an organic unbleached all purpose flour and a whole wheat flour. I love how this gives me the nutrition of the whole grains and the delicious fluffiness that comes with all purpose flour.

Mixing Your Honey Wheat Bread Dough

The process for mixing this delicious bread is so very simple. You’ll simply start by melting the butter in a small saucepan. While that is melting, you’ll acc the water and honey to the bowl of your stand mixer and whisk together. There’s no need to heat the water first because the melted butter will provide the perfect amount of heat.

Once the butter is melted, add it to the water and honey and whisk briefly. Next, you can simply add the salt and the active dry yeast directly to the bowl and whisk once more. There’s no need to let the yeast rest. Instead, you can add your flour directly to the mixture.

Start off by mixing on a low speed to avoid flour flying out of the sides. Mix on a low speed just until the ingredients are incorporated, then turn the speed up to medium-high and allow the dough to mix for about 5 minutes. The dough may be wet, and it may not form a ball until the end of the five minutes. If by the end of the five minutes, the dough has still not cleaned the sides of the bowl. Add in a little more flour (all purpose or whole wheat) a couple tablespoons at a time. Once the dough comes together, knead for a couple more minutes if you needed to add in more flour.

At this point, the dough is ready to transfer to a lightly greased bowl to rise. The bowl will need to be about 3 times larger than the dough ball to allow for rising.

Rising, Shaping, And Baking The Honey Wheat Bread

The first rise will take about an hour to an hour and a half. For this part of the process, simply let the dough rest in the bowl at room temperature. Be sure to cover with plastic so that the dough doesn’t dry out.

Once the dough has approximately tripled in size, remove it from the bowl and shape it into an oblong loaf. Transfer the loaf to a lightly greased loaf pan. Allow the dough to rest for about a half hour to an hour until it has again tripled in size.

While the dough is rising in the loaf pan, preheat the oven to 350 degrees. At the end of the second rise, bake the bread in the preheated oven for about 30-40 minutes until the top is golden brown. The bread should have risen only slightly more during baking.

Remove the bread from the oven and gently remove from the loaf pan. Allow to cool on a plate or cutting board for a minimum of 15 minutes before slicing.

The uses for your honey wheat bread are endless! I love using this wholesome, healthy bread for classic PB&J’s for my little one. This are great for basic toast with breakfast, French toast or French toast casserole. It makes a delicious avocado toast or grilled cheese as well!

Quick Rise Honey Wheat Bread

This healthy honey wheat bread is so easy to make and so quick to get on the table. With a start to finish time of only a few hours, you'll be so glad to have this recipe in your arsenal on busy days!

Ingredients

  • 1 Cup Water
  • 4 Tablespoons Butter
  • 1/4 Cup Honey
  • 1 Teaspoon Salt
  • 1/2 Tablespoon Active Dry Yeast
  • 1 Cup All Purpose Flour
  • 1.5 Cups Whole Wheat Flour (More If Needed)

Instructions

  1. Begin by melting the butter in a small saucepan.
  2. Add the water and honey to the bowl of a stand mixer.
  3. Pour in the melted butter and whisk the ingredients.
  4. Add in the salt and the active dry yeast and whisk again.
  5. Add in the flours.
  6. Fit the dough hook onto the stand mixer.
  7. Turn the mixer onto low speed and roughly combine the ingredients for about a minute.
  8. Once the flours are mostly incorporated, turn the mixer to medium-high speed and knead for 5 minutes.
  9. If after the 5 minutes the dough has not formed a ball, add a couple more tablespoons of wheat flour and turn the mixer back on for a few minutes.
  10. If the dough had formed a ball already and cleaned the sides of the bowl, omit this step.
  11. Add the dough to a large bowl greased with a pinch of olive oil.
  12. Allow to rise for 1 -1.5 hours or until tripled.
  13. Lightly grease a 9x4 loaf pan.
  14. Remove the dough from the original bowl and shape into a loaf by rolling on a counter tightly.
  15. Add to the greased loaf pan and allow to rise again until it reaches the top of the loaf pan (about tripled).
  16. Preheat the oven to 350 degrees.
  17. Bake the loaf for 30-40 minutes or until the top is golden brown.
  18. Remove from the loaf pan and cool on the counter for at least 15 minutes.
