Stuffed Bell Pepper Ingredients
These stuffed peppers require only a few simple ingredients, but they end up bursting with flavor! Below is a list of all the ingredients you’ll need to complete this dish.
- Ground Beef
- Rice
- Peppers
- Onion
- Onion Powder
- Garlic Powder
- Red Pepper Flakes
- Salt and Pepper
- Butter
- Diced Tomatoes

The base of this recipe is the ground beef, rice, onions, and peppers. These ingredients are cooked until tender all together in the skillet to allow all the flavors to well combine.
Then the blend of spices, onion powder, garlic powder, red pepper flakes, and salt & pepper are added to enhance the natural flavor from the previous ingredients.
Finally diced tomatoes are added in to combine a little juice with the dish and to of course add to the flavor.
This delicious combination is stuffed inside the parboiled bell peppers and baked to perfection!
Let’s go over, step by step, how to create this delicious dish.
Step By Step Instructions
Preparing the Peppers
To start the process of making these stuffed peppers, cut the tops off of your peppers and set them aside. Remove the flesh and seeds from inside the peppers.

Prepare a stock pot with boiling water to parboil the peppers.
Parboiling is a method in cooking that involves partially cooking a food item by boiling. The food item is usually only partially cooked because it will finish cooking later on in the process of creating the meal.

Once the water is boiling, add the peppers to the water and boil for 5 minutes. Immediately remove from the water and set aside.

Preparing the Filling
Next, you’ll need to prepare the rice. To cook your rice simply add it to your saucepan along with the water and salt. Bring it to a boil, then turn down to a simmer, add a lid and cook until the rice is tender.
This usually takes about 30 minutes for the rice I use. I like to use brown rice in my dishes for the added nutrients, but if you prefer to use white rice, it will only take about 10 minutes to cook.

Now, you can start preparing your filling for the peppers.
Add about a tablespoon of butter to a skillet and heat over medium heat. Add in your ground beef, and mash into small pieces using the tip of a spatula. You will want the pieces of ground beef to be pea sized.
While the beef is cooking, dice your onion and tope of peppers thinly. Add these to the skillet with the ground beef and continue cooking.

Once the peppers and onions are tender, add in the cooked rice. Finally add in the seasonings and thoroughly stir all of these ingredients with your spatula.

Next, add in your final ingredient for the filling – the diced tomatoes – and thoroughly stir again.

Stuffing the Peppers
Now that you have all the individual parts of your stuffed bell pepper dish prepared, it’s time to assemble!

Carefully fill your peppers with the meat and rice mixture with as much filling as they will hold. Place them in an oven safe baking dish and top them off with another large spoon full of the beef and rice so the peppers are over filled.

Preheat the oven to 375 degrees and bake the peppers in the oven for about 30 minutes so that everything is nicely heated all the way through.
Serve your peppers along with your favorite comfort food sides! Some of my personal favorites are mashed potatoes, baked carrots, and green beans for the perfect country comfort food meal!
Bonus Note
I always grew up eating stuffed peppers with toasted bread on the top. That may sound crazy, but just don’t knock it until you try it! It’s worth it! Cut a few pieces of bread up into 1/2 inch to 1 inch cubes and toast them in a skillet with butter until they are browned evenly. Top the peppers with the bread crumbs and enjoy!

These stuffed bell peppers are the ultimate comfort food! Delicious green peppers are parboiled and then stuffed with a savory mixture of beef, rice, peppers, onions, and diced tomatoes. Then baked to perfection, you'll be making these every time you have green peppers on hand!
Ingredients
- 4 Bell Peppers
- 1 Cup Rice
- 2 Cups Water
- 1/2 lb Ground Beef
- 1/2 Medium Onion
- 2 Cups Diced Tomatoes
- 1 T Butter
- 1/4 Tsp Onion Powder
- 1/4 Tsp Garlic Powder
- 1/8 Tsp Red Pepper Flakes
- Salt and Pepper To Taste
Instructions
- Fill a large stock pot with water and bring to a boil over medium heat.
- Cut the tops off of the peppers, and set them aside. Also discard the seeds and flesh from inside the pepper.
- Parboil the peppers for 5 minutes in the water, remove, and set aside.
- In a medium sauce pan, add the rice, 2 cups of water, and a sprinkle of salt.
- Place over medium heat and bring to a boil.
- After the rice comes to a boil, reduce to a simmer and cover with a lid placing the lid on at an angle to allow some air flow.
- Simmer until the water has cooked away and the rice is fluffy. For brown rice, simmer for about 30 minutes. For white rice simmer for about 20 minutes.
- Add the butter to a skillet over medium heat.
- Once the butter has melted, add in the ground beef and break into pea sized chumps with a spatula.
- Dice the tope of the peppers and the onion.
- Add to the ground beef, and continue to cook over medium heat until the veggies are softened (about 5-7 minutes).
- Add in the onion powder, garlic powder, red pepper flakes, salt and pepper, and mix together in the skillet.
- Add the beef and rice mixture to the pan of rice along with the diced tomatoes.
- Stir all the ingredients together until well combined.
- Scoop the mixture into the parboiled peppers until they are filled all the way.
- Add the peppers to a baking dish, and scoop any remaining beef and rice mixture onto the tops of the peppers.
- Bake the peppers in a 375 degree oven for about 20-30 minutes so everything is heated through.
- Enjoy your delicious stuffed peppers!
